Fio was born in Locarno, Switzerland in 1954. At the age of 15 he began what was to become a lifelong culinary adventure by studying the classic French approach to food preparation, in Ascona and Zurich, Switzerland. During the next ten years, Fio worked in many diverse environments and geographic locations, which exposed him to a wide range of flavors and techniques of local, and sometimes ethnic origin. From Switzerland through the Hawaiian Islands and then on to resort and seasonal cooking in Scottsdale, Vail, Las Vegas and finally, to St. Louis as a private chef, while his new restaurant was being developed.

With a desire to create the “complete dining experience”, Fio’s La Fourchette was opened at the former Westroads Mall (now the St. Louis Galleria), in October of 1982. Fio has a reputation for innovative and imaginative contemporary fine cuisine. Blending his traditional French/Swiss heritage and his diverse cooking interests, Fio utilizes fresh seasonal ingredients to create the classic French haute cuisine presentations or his own signature dishes, the gourmet lite selections (exceeding the American Heart Association’s recommendations), considered unique by the nutrition and health conscious.

Fio’s La Fourchette was famous for its five or six course prix fixe menus, specialties of which included the World Seafood Celebration Menu, offered in the Spring and the Wild Game menu, in the Fall. Award winning pastries and the nightly selection of heavenly soufflés, were perennial favorites of his guests.

In 1994 Fio designed a completely new space, and moved to Clayton. During 2001, the focus of the restaurant changed from nightly dining, to Special Event dinners, private parties and cooking classes.

Since 2001 Fio has been serving private dinners, culinary tours, canyon sunset dining adventures and cooking classes exclusively to clients around the world.

During the 20+ years of hospitality and fine dining provided by Fio and his wife Lisa, they were constantly and consistently recognized by their peers and their industry. Some of their top restaurant accolades include:

Fio has been married to Lisa (who was the restaurant’s Dining Room Manager) for over 40 years. An outdoor and adventure enthusiast, his other interests include running, cycling, rock climbing, skiing and skydiving (Fio is five-time World Champion, as a member of the United States team).
