Fio has been a culinary professional for over 35 years, owning his own restaurant in St. Louis, Missouri, for more than 20 years. During that time Fio has thrilled guests at his restaurant, led cooking demonstrations and classes, consulted with restauranteurs, and been presented with other opportunities ranging from radio shows to cooking videos. In many cases, the responsibilities of owning and running a Nationally acclaimed restaurant of his own, simply limited Fio from taking full advantage of these opportunities. Fio is now looking forward to devoting his time and professional expertise, to the exploration of new culinary adventures. His experience, reputation and personality are all ingredients that blend together perfectly, to create a unique individual with extraordinary style. . . Restaurant Consulting

Based on the specific demands of the client’s kitchen, dining room, management and/or administration requirements, Fio will provide custom consultation services, including, defining your objective, then researching, developing and creating your specific program. Finally, he will produce a detailed report. Should you care to have Fio involved in the execution of the project, that can be discussed as well. Fio’s 30 years of experience can be utilized in a multitude of ways, either by the client needing to establish a preliminary direction, refine the direction they’ve undertaken, or set out on a brand new one.

New Business
Clients could request Fio to be a consultant, to either lead or support in organizing and executing the “opening” of a new restaurant . . . including staff training, kitchen design or recipe or menu development. Fio is available to travel to the business location. Of course, appropriate travel expenses would need to be discussed.

Existing Businesses
Fio can produce a detailed report, outlining a complete analysis of the operation, or focus on one area of specific client need. The fee schedule could be by the hour, day, week or project. Should a restaurant have a need to fill a position for a vacationing chef, Fio is available.

Special Events
Should a restaurant or dining establishment want to orchestrate a special evening or series of evenings (wine dinner, theme menu), Fio’s guidance and culinary innovation is available. Should an establishment need to create special events or menus for their guests, Fio can help. His restaurant was famous for his seasonal special events, the “World Seafood Celebration” or his “Wild Game Menu”. He can create a special menu, just for your establishment.

Recipe Development
By customer or market demand, clients (restaurants, institutions or individuals) can provide specific detailed requirements for a desired recipe or dish, perhaps a “signature dish” or a specific nutritional need (“heart smart” or low calorie). Fio was recently contracted to produce fourteen recipes for Quaker Foods, utilizing the new Nature’s Way products. He has the experience to produce each dish or recipe uniquely suited for the situation.

For example, a casual sit down restaurant, is looking for a hot, low-fat, seafood appetizer with a specific price range and an eclectic culinary feel, that can be produced at their specific volume (e.g. 50 or 150 servings per day).

For example, a steakhouse is looking to develop a “signature sauce” to offer with their signature steaks. This sauce must be one that can be produced in quantity of 1 - 5 gallons daily, easy to hold and serve, not too spicy yet unique and flavorful, not too “out there”, appeal to most guests, and complement other items on the menu (seafood, vegetables, etc.)

Corporate Consultation

Corporations hire Fio’s experience and expertise to work on specific products or projects in their research and development department, along side their home economists and/or R & D staff. Fio is the perfect “outsource” for corporations needing professional consultation, when they have no internal staff. Fio has experience, consulting with corporations, including Beck Flavors and with Ralston Purina. Hire Fio by the hour, the day or the project.

Classes and Demonstrations

Fio feels a special personal reward and fulfillment by speaking to, or giving cooking demonstrations at a culinary institute, winery or University. This could be a one day event, or a week long series. Fio also appreciates the experience of teaching aspiring chefs in retail stores, cooking schools, or other professional environments. He will give cooking demonstrations supporting consumer products, like ranges, cookware, cutlery, or any other product he believes in. He is available to travel to your location and create a demonstration specifically geared towards showcasing your product. Fio’s wit, energy, enthusiasm and humor are particularly suited to these kinds of appearances.

Television and Radio

Fio’s experience and outgoing personality lend themselves to having him demonstrate or talk about food . . . ingredients, preparation, menu creation, wine selection . . . everything essential to making the dining experience most enjoyable, without making it more complex. He is able to demonstrate, or simply explain some of the most complex techniques, ingredients or combinations thereof, so that even those who “can’t boil water” will enthusiastically listen and understand. His energy, enthusiasm and humor are infectious!

Product Developement

Fio has devoted his entire career to experimenting, researching and developing and refining unique tastes. He is capable of helping a company develop a “private label” line of products (sauces, dressings, entrees ready to eat or frozen, etc.), increasing the client’s image, shelf space and profitability. He could then, support that product with personal appearances, demonstrations and if appropriate, even media tours.
